Coconut Cacao Energy Balls

I recently discovered Class Pass, a monthly membership that allows you to take fitness classes from the best fitness studios in the city. I. am. obsessed. I was in a bit of a gym rut, so I’ve really enjoyed being able to try out different classes all around the city!

That being said, I have to take early  classes if I want to make it to work on time. And yes, I’ve become that girl that gets off her FlyWheel bike before stretching even starts so I can be the first to the showers. Girl’s gotta do what a girl’s gotta do.

I don’t like a big breakfast before working out, especially when it’s first thing in the morning. But now that I’m getting up even earlier to trek it across the city to make it to a workout class, I need a little somethin’ somethin’ to keep those energy levels up, from the second I strap on my cycling shoes to the second I walk into my office an hour or so later.

That’s where these babies come in: no-bake coconut cacao energy balls. Not only are these so easy to make, but they provide a perfect little boost of energy before a workout (and they’re SO yummy!)

Coconut Cacao Energy Balls 

Ingredients (makes about 12-14 balls):

  • 1 cup oats
  • 2 tablespoons honey
  • 1/2 cup cacao powder
  • 1/2 cup coconut butter (I used the original flavor from Essentially Coconut)
  • 1/2 cup Sweet Almond coconut butter (also from Essentially Coconut)
  • 1 teaspoon vanilla extract
  • 1/4 cup maca powder
  • 1 scoop Vital Proteins collagen peptides
  • 1 teaspoon cinnamon
  • ~1/2 cup almond milk

Mix all ingredients together in a mixing bowl. You may need to add more almond milk, depending on the stickiness.

Once ingredients form a sort of  “dough”, roll into little balls.

Pop in the fridge, and VOILA! A healthy, fudgey, coco-nutty treat, perfect for a pre-workout snack, mid-day pick-me-up, or even good enough to eat for dessert.
