Asian Quinoa Salad

This salad is so easy to make – literally the only cooking required is making the quinoa and steaming the edamame!

The mixture of quinoa and all the fresh, Asian-inspired veggies is mixed with an amazing savory, Sesame Seed Scallion dressing. So much spicy, sweet, crunchy, flavorful, fresh goodness.

Ingredients:

For the salad:

  • 1 cup quinoa
  • 2 cups water or broth
  • 1 dash of salt
  • 1 cup chopped red cabbage
  • 1 cup cooked edamame
  • 1 cup shredded carrots
  • 1/2 cup chopped cilantro
  • 1 chopped red bell pepper
  • 1 chopped jalapeno
  • 1/2 chopped red onion
  • Handful chopped scallions

For the Sesame Seed Scallion dressing:

  • 1/2 cup soy sauce or tamari
  • 1 tablespoon sesame seed oil
  • Handful chopped scallions
  • Handful chopped cilantro
  • 2 tablespoons sesame seeds
  • 1/2 tablespoon grated ginger
  • 1 teaspoon red pepper flakes
  • 1 teaspoon sriracha sauce

Directions:

  • Bring two cups of water or broth to a boil. Add the quinoa, putting the heat to low and simmer for ~15 minutes, until water/broth has been fully absorbed by the quinoa and it is fluffy.
  • Add the chopped veggies to a large mixing bowl. Once the quinoa has cooled, add to the veggie mixture.

  • Whisk together all the ingredients for the salad dressing. Pour over the quinoa salad and toss.

Note: This salad tastes even better the next day once the flavors of the dressing have absorbed into the quinoa. It’s great for lunch prep!
