Soy balsamic roasted broccoli and mushrooms tossed with zucchini noodles, edamame, and the most addicting spicy peanut sauce come together in under 15 minutes for this easy weeknight dinner!
Zoodle Pad Thai
Ingredients (makes 2-3 servings):
For the pad thai:
- 2 zucchinis (spiralized)
- 1 head broccoli
- 2 cups sliced mushrooms
- 1 cup edamame
For the roasted broccoli and mushrooms:
- 2 tbsp soy sauce
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1 clove garlic, minced
- Salt and pepper, to taste
For the spicy peanut sauce:
- 2 cloves of garlic, minced
- 2 tbsp creamy peanut butter
- 1 tbsp sesame oil
- 3 tbsp soy sauce (or coconut aminos to make this dish vegan)
- 3 tbsp sriracha
- a dash of ginger
Step One:
Preheat oven to 375. Toss broccoli and mushrooms in soy sauce, balsamic vinegar, and olive oil mixture. Spread out on roasting pan and let roast for 20 minutes.
Step Two:
While the broccoli and mushrooms are roasting, make the sauce, combing all spicy peanut sauce ingredients in a blender or food processor (I use my Nutribullet and it’s SO easy!)
Step Three:
Spiralize the zucchini using a spiralizer. I have a cheap, $5.00 I got from TJ Maxx, but any spiralizing tool works!
Step Four:
Heat a skillet with a dash of olive oil. Remove the broccoli and mushrooms from the oven. Heat zucchini noodles on the pan, adding the edamame, broccoli and mushrooms. Heat for a few minutes, then toss in the sauce!
