I get it. We’re all rushed in the mornings. No one (at least nobody I know) has time to sit down with a leisurely cup of coffee, read the newspaper, and eat a plate of eggs and bacon. In the hustle and bustle of everyday life, it can be hard to prioritize breakfast, something that may seem so trivial before you head off to a busy day.
But y’all – breakfast is SO dang important. It revs up your metabolism and prevents blood sugar levels from dropping to keep you fueled throughout the morning (because no one wants to be that person with a rumbling tummy at that 11am meeting).
My favorite “grab ‘n go” breakfast? Overnight oats. There are so many variations on this EASY, CHEAP, and DELICIOUS breakfast. Here’s just one of my favorites.
Mixed Berry Overnight Oats
The night before:
- 1 cup rolled oats (Watch out, there should be only be ONE ingredient on your packet of oats: whole grain oats)
- 1 cup milk (I prefer Califia Farms unsweetened vanilla almond milk, but use whatever you want!)
- 1 tsp. chia seeds
- 1 dash vanilla extract
- Mashed banana, raspberries, and blueberries
- 1 scoop Vital Proteins collagen peptides
- All. the. cinnamon.
Mix all the above ingredients together in a container, making sure the banana is really mashed up. Put in the fridge before wishing it a good night’s sleep.
Pro tip: If you have an almost empty peanut or almond butter jar, these are the perfect containers for overnight oats. Especially when you get to the bottom of the jar and you’re scraping the sides clean of extra peanut butter. Oh. my. gah.
The next morning:
- Wake up, grab your oats, and GO!
