Sweet Cashew Coconut Bites

As I mentioned in my post for my Coconut Cacao Energy Balls, I am on a Class Pass high. Signing up for early morning workout classes has forced me to get out of my bed and leave my apartment by 7:30am, leaving me feeling extra motivated and ready to take on the day.

But this chick wakes up hangry most days and working out on an empty stomach has never worked for me. That’s where these sweet cashew coconut bites come in.

These little nutritious bites of joy are filled with fibers, plant-based protein, healthy fats, and are naturally sweetened. They’re simply perfect to help curb hunger and give a little boost of energy before a workout. Or, when you just want a sweet treat, because these are SO GOOD.

Cashew Coconut Bites 

Ingredients (makes about 12-14 balls):

  • 1 cup raw cashews
  • 1 cup coconut flakes
  • 1/2 cup creamy cashew butter (I used Whole Foods 365 Brand)
  • 2 tbsp. hemp seeds
  • 2 tbsp. ground flaxseed
  • 1 tbsp. cinnamon
  • 1 tbsp. vanlla
  • 1 tsp. sea salt

Step One:

Grind cashews in a food processor.

Step Two:

Mix all ingredients together in a mixing bowl.

Step Three:

Using your hands, roll the mixture into little balls, adding more coconut “sprinkles” on top.

Step Four:

Refrain from licking the bowl clean.
